Second grade wheat flour is used by bakery manufacturers and is made from both hard and soft wheat varieties. The flour contains 8-10% particles of grain husks (bran), with particle sizes ranging from 30 to 200 microns. Additionally, second grade wheat flour contains 72% starch and 25% gluten.
The flour has a dark color and a coarse texture. It is often used in combination with other types of flour because when used alone, the dough may be too heavy to rise properly with yeast. Second grade wheat flour is commonly used for baking bread, making unleavened dough products, preparing pancakes, fritters, and dumplings. In the confectionery industry, it is used for producing certain types of cookies, wafers, gingerbread, and bread.
