Soybean oil (Grade 1) is a premium-quality vegetable oil widely used in the food industry. It is an essential ingredient in the production of confectionery, sausage, and cheese products.Cold-pressed and unrefined soybean oil is considered the most beneficial as it retains its natural nutrients.
However, it is not suitable for frying, as it can release harmful carcinogens at high temperatures. Instead, it is best used for enhancing the flavor of cold dishes due to its distinctive taste and aroma. For frying, refined soybean oil is a better choice, as it has a mild, slightly sweet taste and is odorless.
Soybean oil consists of a complex mixture of various triacylglycerols, phospholipids, waxes (esters of high-molecular-weight alcohols and fatty acids), a certain amount of free fatty acids, and other non-lipid compounds.
From a chemical standpoint, triacylglycerols are esters formed from glycerol and fatty acids. The fatty acids in soybean oil are primarily unsaturated. Structurally, fatty acids are derivatives of hydrocarbons, in which one hydrogen atom is replaced by a carboxyl group.
All fatty acids share the same carboxyl group, but their hydrocarbon chains ("R" groups) differ in carbon atom count and degree of unsaturation. A fatty acid is classified as saturated if each carbon atom in its molecule is bonded to two hydrogen atoms.
